Description
Crafted from barley grown by a group of dedicated farmers, including Jason Stanley, Paddy Tobin, Trevor Harris, John Mallick, Pat Booth, and Alan Jackson, the Gaia 1.1 is a testament to the terroir of Irish whiskey. The barley was harvested in the summer of 2015, distilled in week 36 of 2016, and matured for 3 years, 9 months, and 20 days before being bottled on September 30, 2020.
The Gaia 1.1 is a complex and intriguing whisky that rewards exploration. Its golden honey color, with viscous oils and legs that seem to linger forever, is a testament to the quality of the spirit. The nose is a captivating blend of aromas, with notes of orange zest, malty figs, seaweed, hay, salted caramel, peppermint, rosewater, and freshly turned soil. The palate is a symphony of flavors, with heat, zesty pepper, cloves, figs, oiliness, cherries, butterscotch, pears, and layers of spice dancing across your taste buds. The finish is long and zesty, with a lingering oiliness that dries but leaves you chewing and a sweetness that appears right at the end.
With 24,000 bottles released, the 2020 Waterford Organic Gaia 1.1 is a highly sought-after collector’s item. This special release is a celebration of the Waterford distillery’s commitment to quality, sustainability, and innovation. Whether you’re an experienced connoisseur or simply exploring the world of Irish whiskey, the Gaia 1.1 is a truly exceptional spirit that will be cherished for years to come.
